Recipe: Keto Eggs 2 Ways

For those on a Keto diet, the gist is that it’s a low carbs/sugar, mod protein, high fat diet.  This propels you into a state of ketosis, meaning your body is primarily fueled by ketones and not glucose.  Ketosis gives you a plethora (I like big words and I cannot lie) of benefits from better focus and energy levels to better skin and sleep. I haven’t been blogging about this lifestyle for the last 4 months, so, I’m going to update the blog with some of my go to food options that I’ve been using all this time and we will start with breakfast.

I’ve always loved cooking and baking, in fact, did you know that I had plans to become a chef? In high school I took food science, nutrition, and culinary classes with the hopes of becoming a chef!  I’m not sure why that ever changed now that I think about it and who knows, it could happen in the future, as Chef Gustav from Ratatouille says “anyone can cook!”  My cooking has come a long way from the toaster oven chronicles I used to blog about.  (Search for it on this site, you’ll be amazed at what I made in a toaster oven).

Anywho, we’re here to talk about food to eat, NOW! Since no carbs/sugar are allowed on keto, 90% of the traditional breakfast foods are eliminated! Which by the way, have you ever stopped to think why are all breakfast foods PACKED with sugar?  Just a thought. So, Bye bye, cereal and pop-tarts! Aloha, Bagels and Toast! Sayonara, Rice and Spam! Hasta La Vista Yogurt!  What’s left!? Eggs, Bacon and Veggies are left my friend. (and some other random things)

Here is a simple, healthy, tasty breakfast that even my 5 year old could make….if I let him use the stove…which I don’t, BUT if I DID….he could totally do this.

Veggie Egg Scramble:

  • 4 Eggs
  • 1 Cup of cheese (pre-shredded or shredded yourself, you choose)
  • 1/2 cup of broccoli, RAW
  • 1/4 cup of diced onion, RAW
  • 1 1/2 cup of spinach, RAW
  • 1-2 TBS Kerry Gold Butter
  • Crack eggs in a cup or bowl and mix
  • Sauté veggies with butter in a large skillet
  • Add eggs to skillet
  • Continue to cook until eggs are no longer runny
  • Add cheese and quickly stir
  • Pau (hawaiian word for finished)

Want something even simpler? You can never go wrong with eggs, bacon and avocado!  I cooked the eggs in Kerry Gold Butter and mixed in some cheese just before it finished cooking.  These breakfasts are PACKED with healthy fats: Grass-Fed Kerry Gold Butter, Bacon, Avocado! I pretty much eat a whole avocado a day….if I remember to buy them.

Really if you think about it, you could use these simple, staple ingredients to make a ton of different combinations and you could literally throw anything into an egg scramble.  I’m all about the multipurpose, get all the life out of it that you can, use leftovers and make something new, saving money because it’s kind of expensive kind of life.  I’ve used tofu, leftover hot dogs or sausage, leftover mushrooms and onions from steak, you name it!  If there’s one thing that I’ve learned by being on keto it’s, Keep. It. Simple. Do this and you won’t stress yourself out and you’ll be more likely to stick with it!
