Mini Pumpkin Pies

Remember how I said I don’t really care for pumpkin anything? It’s amazing how many recipes I’ve found lately that have really turned my palette around! Pumpkin normally grosses me out, I’m not really sure what it is…the texture or the taste. Or it could be the fact that I threw up and got incredibly sick after eating a pumpkin pie at a thanksgiving dinner about a decade ago…yes a decade ago…an elephant never forgets right?

Well today this elephant is bringing you yet another fall and thanksgiving favorite Pumpkin Pie! Not just any pumpkin pie, but MINI pumpkin pies.  You guys will be MIND BLOWN when you see how easy and FAST these little desserts are. Seriously, the cuteness factor of is at 100. I whipped these little guys out in about 45 minutes…NO JOKE! The only thing that takes a little while is the cooling BUT, you could totally eat them warm and they will still be just as amazing…if not better!

Baking Fails: Pumpkin Cake Mix Cookies

When I was about 15 and in high school, I thought I wanted to be a baker when I grew up.  I started taking cooking classes in school and LOVED it. Cooking is so much fun and a great skill to have for life! One thing that I learned was that baking is a science.  Baking requires precise measurements of certain ingredients or it all goes to waste!  Sometimes it requires increasing or decreasing amounts of ingredients to obtain the perfect result.  I just want to share with you some of my baking fails to SAVE you the trouble of making them yourself.

I’ve been seeing on Pinterest, recipes for making cookies from cake mix, specifically I saw a recipe for 2 ingredient pumpkin cookies. First let me say that when I think cookies, I think soft and chewy cookies OR crunchy cookies. Recipe: Cinnamon Apple Chips

Apples and Pumpkins are the epitome of Fall.  I have been searching and searching for an apple recipe to try and I decided to go back to this guy.  Apple Chips have been on my mind for a few months now, but I’ve been so afraid to try to make them!  Why? Picky Eaters: 10 Ways To Encourage Healthy Eating

My son is a picky eater.  I shouldn’t say picky, he actually eater a wider variety of foods than my 19 year old sister.  When he was just starting to eat solid foods, I was one of those moms who thought she would make all of his baby food jars just gross me out.  And I did it! It was a great experience and I 100% enjoyed it.  I frequented farmer’s markets and tried to buy local when I could. My son got the purest possible foods with the most minimal amount of additives. For those first few months to a year he would eat anything and everything I would put on his plate or plop in front of him.

Flash forward to today and I am in pancake and hotdog hell.  Now that my little guy talks, I give him choices of meals, which he usually shoots down and says “uh, mommy, I tink I want some…..(long pause)…pancakes!”. Sometimes I dig myself in a hole and just ask him what he wants, when I know the answer is “pancakes mommy!”.  90% of the time he will respond with “pancakes mommy!” or “mommy hotdogs!”. I haven’t got the faintest idea why pancakes, but hotdogs I get. Nitrates, human DNA and all, I love me some hotdogs! Everything in moderation right?

Super Quick Oreo Halloween Treats

I have a super quick and easy Halloween treat for you today.  It’s so easy that your little one can help you make it, and if you flub up no one is going to know the difference. So quick, that if it’s midnight and you forgot to make something for your kids Halloween party tomorrow, this would be your saving grace. PROMISE!

It’s not midnight, but my son’s Halloween event for school is tomorrow.  With me being sick, I procrastinated.  I am on the other hand a super type A person, and I needed something cute, creative, and yummy.  Something that would wow everyone.  Yes, my friends, I am…THAT mom.

Ice cream is probably my dessert weakness. I’ve never really cared for pies, cakes, cookies, or cupcakes, but ice cream…I can never turn it down!  When I was pregnant, I swear I used it as an excuse to eat a bowl every night after dinner, for that I paid two fold.  I got gestational diabetes, and my son is addicted too! (well, sugar in general).  I promise, I was a good mom and I tried to keep anything sweet out of those tiny little hands and mouth, but the sweet tooth is strong in my family.  My mom, aunty, and sister are ALWAYS eating something that can and will rot your teeth, it was no wonder that one of his first experiences with cake was with my crazy family!

New York City Stops: Magnolia Bakery

I had honestly never heard of Magnolia Bakery until a friend of mine insisted that I go there and try the banana pudding.  When I went to New York recently, it was one of the first stops on my itinerary.

Magnolia’s started as a small bakery in the west village, and since has expanded to locations worldwide. How did I not know this?!  Anywho, there are multiple locations around new york city, and the one I happened to walk into was in Rockefeller Center.

On the outside, it looks like a typical bakery, but when you walk in, it feels so homey! Continue reading

Recipe: Pumpkin Cake with Cinnamon Glaze

I hate pumpkin pie. I really do. I don’t know what it is about it, but I absolutely do not like pumpkin pie.  I don’t know if it’s the texture, or the smell, but it makes me gag just thinking about it.  However, I will and do eat anything else that’s pumpkin.  Pumpkin Crunch is probably one of my favorite go to desserts.  When I was in college I worked at this place called The Wedding Cafe and they sold this BOMB pumpkin crunch. I’m pretty sure I gained about 5 pounds just from eating it every shift.

I like to cook, Pinterest is my best friend and worst enemy.  I still haven’t figured out if it’s something that I’m good at, but I know everything I make is at least edible.   Continue reading

Fries are my best friend. Shoestring, crinkle, tater tots, fat, skinny, fresh or frozen, homemade or fast food, crispy, soggy, baked or deep fried. I love ALL KINDS OF FRIES. I have my favorites of course but, generally speaking I’m not fry racist. Unless they are old, old and cold fries are never good. While training for Miss Hawaii, I CRAVED french fries and pizza. Side note: training for a pageant is no joke, it’s hard work, I don’t intend to do it ever again, mostly because I love eating way, too, much.
