Mini Pumpkin Pies

Remember how I said I don’t really care for pumpkin anything? It’s amazing how many recipes I’ve found lately that have really turned my palette around! Pumpkin normally grosses me out, I’m not really sure what it is…the texture or the taste. Or it could be the fact that I threw up and got incredibly sick after eating a pumpkin pie at a thanksgiving dinner about a decade ago…yes a decade ago…an elephant never forgets right?

Well today this elephant is bringing you yet another fall and thanksgiving favorite Pumpkin Pie! Not just any pumpkin pie, but MINI pumpkin pies.  You guys will be MIND BLOWN when you see how easy and FAST these little desserts are. Seriously, the cuteness factor of is at 100. I whipped these little guys out in about 45 minutes…NO JOKE! The only thing that takes a little while is the cooling BUT, you could totally eat them warm and they will still be just as amazing…if not better!

Picking Pumpkins — Waimanalo Pumpkin Patch

It’s not fall until you’ve picked a pumpkin for Halloween. Am I right? It’s pretty new thing here in Hawaii. There aren’t very many self pick farms here in Hawaii, unlike our mainland counterparts, pumpkin patches have only been around for maaayybeee the last 10 or so years? I could totally be wrong, but I know that I surely didn’t go pumpkin picking when I was little. The closest I got to carving a pumpkin, was getting those really, REALLY, tiny pumpkins from the market, and drawing a face on them with a sharpie.

Since the advent of Pinterest, pumpkin patches have been on my mind. When my son was born, I obsessed…I mean, I carefully calculated the opportunity to take one of those super cute pumpkin patch pictures that are splattered ALL OVER Pinterest. Wait, what I mean to say is that I really wanted to have a great time picking a pumpkin from a farm, instead of Sams Club. Who am I kidding, I just wanted a good picture. We took my son when he was about to turn 1, it was a horrible experience. The farm was dusty, little man was fussy, it was hot and humid, crowded, it was just not an enjoyable experience. I can’t say it enough, New York City is amazing.  Last week I had the opportunity to visit the city for the second time ever, and guess what?  I got to go back for a THIRD time!  The first time I went there I didn’t get to see or do much because I was so overwhelmed and didn’t know what to do.  The second time I had a little time to do some research and planning and by this last time I pretty much had a set idea of what I was going to do and how I was going to accomplish it.  Surprisingly (or not so surprisingly) there was still tons of stuff to do.  This time around I explored the city solo. Ice cream is probably my dessert weakness. I’ve never really cared for pies, cakes, cookies, or cupcakes, but ice cream…I can never turn it down!  When I was pregnant, I swear I used it as an excuse to eat a bowl every night after dinner, for that I paid two fold.  I got gestational diabetes, and my son is addicted too! (well, sugar in general).  I promise, I was a good mom and I tried to keep anything sweet out of those tiny little hands and mouth, but the sweet tooth is strong in my family.  My mom, aunty, and sister are ALWAYS eating something that can and will rot your teeth, it was no wonder that one of his first experiences with cake was with my crazy family!

Recipe: Pumpkin Cake with Cinnamon Glaze

I hate pumpkin pie. I really do. I don’t know what it is about it, but I absolutely do not like pumpkin pie.  I don’t know if it’s the texture, or the smell, but it makes me gag just thinking about it.  However, I will and do eat anything else that’s pumpkin.  Pumpkin Crunch is probably one of my favorite go to desserts.  When I was in college I worked at this place called The Wedding Cafe and they sold this BOMB pumpkin crunch. I’m pretty sure I gained about 5 pounds just from eating it every shift.

I like to cook, Pinterest is my best friend and worst enemy.  I still haven’t figured out if it’s something that I’m good at, but I know everything I make is at least edible.   Continue reading

Today is World Smile Day friends! Let me preface this by saying that it’s kind of ironic that I am writing about this because I’ve had people tell me I need to smile more, on more than one occasion.  I will also say that it is one of my BIGGEST pet peeves when people tell me I need to smile!!! I smile ALL THE TIME, just because I happen to have BRF (B*&%$ resting face) does not mean that I am not happy. Moving on.

Fries are my best friend. Shoestring, crinkle, tater tots, fat, skinny, fresh or frozen, homemade or fast food, crispy, soggy, baked or deep fried. I love ALL KINDS OF FRIES. I have my favorites of course but, generally speaking I’m not fry racist. Unless they are old, old and cold fries are never good. While training for Miss Hawaii, I CRAVED french fries and pizza. Side note: training for a pageant is no joke, it’s hard work, I don’t intend to do it ever again, mostly because I love eating way, too, much.
